1 cup podded edamame beans
2 tbsp soy sauce
4 tbsp lemon juice
2 tbsp olive oil
2 tbsp castor sugar
1 tbsp mayonnaise
1 tsp sriracha chilli sauce
400g fillet steak, trimmed and finely chopped
1 tsp finely chopped ginger
1 tsp finely chopped shallot
2 tsp chopped chives
1 garlic clove, sliced and fried in vegetable oil until golden
4 pinches baby shiso leaves
METHOD
■ Boil edamame beans in salted water for 2 minutes, drain and reserve.
■ Mix together soy sauce, lemon juice, olive oil and sugar and stir until sugar has dissolved.
■ Mix together mayonnaise and chilli sauce and reserve.
■ Mix fillet steak with ginger, shallot and chives and half the soy and lemon dressing.
■ Dress edamame beans with remaining dressing.
■ Divide steak between four plates, spoon mayonnaise over and top with fried garlic and baby shiso.
■ Serve with edamame beans on the side.
